材料 - Ingredients:
1 隻 pcs (260 g) 澳洲急凍青邊鮑魚 Australian Green Lip Abalone
1/2 隻 pcs 雞 Chicken
379 g 豬腱骨 Pork tendon bone
3 – 4 片 sliced 薑 Ginger
1 粒 pcs 紅蔥頭 Shallot
或 or 3條 stalk 青蔥 Spring Onion
3250 ml 清水 Water

方法 - Method:
1. 用小刷刷去鮑魚裙邊的青色. 切片;
   Use a small brush to wash and clean the abalone, then slice it;

2. 沖洗雞隻及清去內臟;
   Wash and clean the chickens and remove internal organs;

3. 沖洗豬腱骨;
   Wash and clean the pork tendon;

4. 準備鍋, 倒入適量的水, 之後放入薑及紅蔥頭, 水滾關火, 放入鮑魚片焯一焯;
   Perpare a pot, pour in half of the pot water, add ginger and shallots, bring to  boiling with high heat, then turn off the heat, add abalone slices for blanching;

5. 沖沖焯了水的鮑魚;
   After blanched, take ou all abalone, and rinsing it under running water;

6. 豬腱骨出水;
   Blanch the Pork tendon bone;

7. 雞隻過熱水;
   Blanch the chicken;

8. 放鮑魚片, 薑在3250 清水中, 開大火;
   Perpare a soup pot, put abalone slices and ginger into 3250 ml water, turn to high heat;

9. 5 分鐘後放入出了水的豬腱骨;
   After 5 minutes, put in the blanched pork tendon bone;

10. 30分鐘後放入雞隻;
     After 30 minutes, Put the chicken in;

11. 90 分鐘後熄火, 留煲內10分鐘, 即可。
    After 1.5 hrs, turn off the heat, keep in the pot for 10 minutes, then serve it.

鮑魚古稱"鰒魚",又有"鏡面魚、九孔螺、明目魚"等別名,那沿用至今的這個學名是怎樣來的?春秋時期一個齊國大夫叫鮑叔牙,他就是「管鮑之交」這個成語典故里的主人公,曾推薦管仲當上齊相,從而幫助齊桓公九合諸侯,成就齊國霸業。這位識才薦賢之士曾說,人生有兩大快事:「一為食盾魚,二為飲玲瓏。」據考證:盾魚,因鮑叔牙愛吃,而後被稱為鮑魚,也成了「鮑魚」名字的由來。
澳洲青邊鮑魚
全球鮑魚共有100多品種,產地有中國、日本、澳大利亞、新西蘭、南非、美國、墨西哥、歐洲、中東一帶。全世界產量最多的國家是澳洲,而青邊鮑是頂級之品,在澳洲西南部出產的最佳。
鮑魚的生長受海水的水流速度、水質、氧分、溫度、光線等對的影響,同一品種,但在不同的海域生長,也會出現不同的質量,售價亦有很大差異。

野生鮑魚因吃海帶、海藻為主,所以生長緩慢,長到約1公斤大小,需時約8年。採撈的工作人員需要潛水入20米以下的寒冷深海,在礁石表面、岩石凸出部分的下端、岩洞、石塊之間的縫隙來逐個補捉,所以產量不高,每年只有約60噸。
Wild abalones mainly eat kelp and seaweed, so they grow slowly. They grow to about 1 kilogram in size and take about 8 years. 鮮鮑被打撈之後,需要經過多個步驟來處理,才能令它們在運輸過程保持鮮美。經過三天的雜質排泄,鮑魚開始被分配, 肥壯的鮮鮑運輸出國;次一等的即處理成冰鮮鮑魚;最普通的被收購做罐頭鮑魚。
After being salvaged, fresh abalones need to be processed in multiple steps to keep them delicious during transportation.
