Autumn is the seasonal fruit of pears. It is cooked with other ingredients and is most suitable for Qiuzao.
This syrup is a special soup of old Beijing. The name is "Diao Pear Sweet Soup". The word "hang" comes from a copper pot with beams in Beijing. It is a weight and measure of old Beijing. One hangs one pot, half hangs half. pot. In the streets and alleys of Beijing, vendors used this to calculate.
In the Peking Opera of old Beijing in the late Qing Dynasty and the early Republic of China, the famous Shengdanjiao gathered in the Sijiujiucheng Theater at that time. Every night, the gongs and drums in the theater were noisy, and the various stalls outside the theater were also very busy. Most popular
They sell pear soup.
The soup is boiled on the spot and placed in a large clay pot on a bamboo cart. There is a small stove on the bamboo cart.
When someone wants to drink pear soup, the stall owner scoops out some pear soup in a clay pot, puts it in a copper hanging pot with long handles, and then heats the hanging pot on the fire. A pot is a pot with one hanging, hence the name Xiao Diao Li Tang.
When diners drink, pour the pear soup from the hanging pot into the small cup and taste it slowly. After watching the opera, the audience loves to sit in front of the pear soup stall, drink a hanging pear soup, and talk about the opera until late at night.
Because the pear soup moisturizes the throat and protects the throat. Usually, people are sent to the stall to bring the pot back with it, and the pot is sent back the next day. The stall owner also drank it because of the protagonist of Peking Opera, which brought fame.
