天時暑熱 胃口欠佳,就想起了冬瓜。

Construction company would take whole roasted pork to the temple for praying.
I was lucky having some.

份量 Serving: 3 ppl
烹調時間 Cooking time: 45 分 minutes
(冬瓜軟身 ) (Winter melon soft body)
材料 - Ingredients:
282g 燒肉 Roasted pork
650g 冬瓜 winter melon
22g 豆卜 tofu puff
2茶匙 (tsp) 咸原粒麵豉 salted Chinese Bean Sauce
2 粒 (ea) 紅蔥頭 (切半) shallots (cut half)
3 片(sliced) 薑ginger
2粒 (clove) 蒜頭(切半) Garlic (cut half)
芡汁 Sauces:
1茶匙 (tsp) 粟粉 Corn starch
少許 (QS) 老抽 Dark soy sauce
少許 (QS) 清水 Water
裝飾Décor
1支 (ea) 芫茜 Coriander
1支 (ea) 青蔥 spring onion
方法 - method :
1. 冬瓜去皮,切厚塊。再沖洗。
Winter melon peeled, Cut into thick pieces. And wash.
2. 加油,大火爆香薑片。
Add oil, (high heat). Fried ginger slices.
3. 放入冬瓜,少許鹽,炒2分鐘。加水,蓋上鑊蓋,轉中火。
Place winter melon in, and some salt. Fry for 2 minutes. Add water. Turn to med heat, cover and cook.
4. 另一邊: 加入油,炒香薑片、紅蔥頭、蒜頭、咸原粒麵豉。
Add oil, put sliced ginger, shallots, garlic, salty raw noodles in black sauce, fry until fragrant.
5. 放燒肉一齊炒 3分鐘。
Add the roast pork and stir fry for 3 minutes.
6. 再加入豆卜,炒 1 分鐘。拿起備用。
Add tofu puff and stir-fry for 1 minute. Pick up all.
7. 冬瓜肉現半透,加入炒過的燒肉及豆卜。蓋煲蓋,(中火)。直至瓜肉全軟身。
Winter melon is cook into translucent. Add fried pork and tofu. Cover it (med heat). Until Winter melon is soft.
8. 加芡汁,煮至沸騰,完成。
Add the Sauces. Boil it and Finished.
9. 加入芫茜、青蔥作裝飾。
Add coriander and spring onion for Décor.
