今次就做另一款給大家多一個選擇~~~

材料 - Ingredients:
粟米高湯 - Corn Stock
粟米 Corn - 4 條 ears
京蔥 (綠色部份) Leek (green part) - 30 g
水 Water - 3 L
巴西利 Parsley - 1 tbsp
百里香 Thyme - 1 tbsp
月桂葉 Bay Leaf - 2 片 pcs
粟米濃湯 - Corn Soup
粟米粒 Corn kernels - 4 條 Ears
洋蔥 Onion - 100 g
京蔥 (白色部份) Onion (white part) - 30 g
百里香 Thyme - 1 tbsp
月桂葉 Bay Leaf - 2 片 pcs
粟米高湯 Corn Stock - 1.5L
豆奶 Soy Milk - 500 ml
鹽和黑椒粉 Salt and black pepper - 適量 QS
做法 - Method:
1. 先把 粟米 去掉外層, 摘下 粟米鬚 (保留煮高湯), 用刀把所有粟米粒切下來 (粟米芯保留煮高湯), 備用;
First, remove the cover of the corn, take off the corn silk (keep for the stock), cut all the corn kernels with a knife (keep the corn core for the stock), set aside;
2. 洋蔥 切粒 和 京蔥 (白色部份) 切片, 備用;
Dice onion and Sliced Leek (white part), set aside;
3. 準備湯鍋, 倒入冷水, 放入 粟米鬚, 粟米芯, 京蔥 (綠色部份), 巴西利, 百里香 和 月桂葉, 開大火煮至沸騰, 之後轉小火濃縮至 1/2;
Prepare a soup pot, pour in cold water, add corn silk, corn core, leek (green parts), parsley, thyme and bay leaves, bring to boiling with high heat, then reduce to 1/2 with low heat;
4. 先把 粟米高湯 過篩, 備用;
Sieve the corn stock first, set aside;
5. 準備湯鍋, 倒入適量的油, 中火燒熱後, 放入 洋蔥粒 炒至軟身(不上色), 放入 百里香 和 京蔥片(白色部份) 炒至軟身(不上色), 放入 粟米粒 炒至軟身(不上色);
Prepare a soup pot, pour some oil, heat up with medium heat, add the onion diced and fry until soften (no coloured), add thyme and leek (white part) and fry until soften (not coloured), add corn kernels and fry until soften (no coloured);
6. 當粟米粒 炒至軟身後(不上色), 倒入粟米高湯 和 豆奶, 放入 月桂葉, 先轉至大火煮至沸騰, 之後轉小火煮至剩下 1/2;
When the corn kernels are fried until soften (not coloured), pour in the corn stock and soy milk, add in the bay leaves, first turn to high heat and bring to boiling, then turn to low heat and reduce until 1/2 left;
7. 當 粟米湯 煮至剩下 1/2, 關火, 先取出 月桂葉, 準備攪拌機, 把粟米湯攪碎成 粟米濃湯, 之後過篩, 備用;
When the corn soup is reduced to 1/2 remaining, turn off the heat, take out the bay leaves first, prepare the blender, blend the corn soup into a creamy corn soup, sieve it and set aside;
8. 準備湯鍋, 倒入已過篩的 粟米濃湯, 先開大火煮至沸騰, 最後關火, 加入 鹽和黑椒粉 調味, 即可。
Prepare a soup pot, pour in the sifted corn soup, first turn to high heat and bring to boiling, then turn off the heat, add salt and black pepper to taste, and that's it.
