蠶豆 :
又稱羅漢豆、胡豆、蘭花豆、南豆、豎豆、佛豆
營養價值豐富,一般人都可食用,可用為糧食、零食、蔬菜,也可作飼料、綠肥兼用作物。
有開胃消食的功效、醒腦提神、去水腫、明目利膈、預防心血管有效用。
在懷孕期間容易嘔吐惡心、食欲不振的准媽媽適合食用,但不要食用過量。
Broad beans:
Also known as Lohan Bean, Hu Bean, Orchid Bean, Southern Bean, Vertical Bean, Buddha Bean
The nutritional value is abundant , most of us can be eaten . It can be used as food, snacks, vegetables, and can also be used as feed and green.
It has the effect of appetizing,digestion, in rejuvenating the brain, removing edema, improving eyesight, and preventing cardiovascular diseases.
For expectant mothers :  who are prone to vomiting, nausea and loss of appetite during pregnancy, but don’t eat excess quantity.
 
不適宜 :
中焦虛寒者不宜食用,發生過蠶豆過敏者、痔瘡出血、消化不良、慢性結腸炎、尿毒症等病、患有蠶豆病的兒童。
(注意:蠶豆中含有有毒的β-氰基丙氨酸和L-3,4-二羥基苯丙氨酸。β-氰基丙氨酸是一種神經毒素,中毒後出現肌肉無力、腿腳麻痹等症狀。)
Not suitable:
People with deficiency and cold are not suitable for consumption. Those who have had allergy to broad beans, hemorrhoids bleeding, indigestion, chronic colitis, uremia and other diseases, children with broad bean disease.
(Note: Broad beans contain toxic β-cyanoalanine and L-3,4-dihydroxyphenylalanine. Β-cyanoalanine is a neurotoxin that causes muscle weakness and leg and foot paralysis after poisoning symptom.)
 
雪菜 :
因為此菜在雪時反茂,稱為雪裡紅(雪裡蕻)、春不老、雪裡翁,是芥菜類中的一種葉菜。
有解毒消腫、開胃消食、温中利氣、明目利膈。
不適宜 :
禁忌 : 以腌制為主,不能大量食用、含大量粗纖维,不易消化、不能和鳖肉一起吃,會引發水腫
Pickled (Salted vegetable)
The Pickled growing bloom in the snow, it is a leafy vegetable in the mustard category.
Is is good for the detoxification and swelling, appetite and digestion, warmth and qi, eyesight and diaphragm.
Not suitable:
It is mainly marinated, cannot be eaten in large quantities, contains a lot of crude fiber, is not easy to digest, cannot be eaten with turtle meat, it will cause edema.

材料(3人份量) - Ingredients ( 3 Serves)
蠶豆192g
Broad Green 192g
雪菜莖部 93g
Pickled / Salted Vegetables stem 93g
糖 1 茶匙
Sugar 1 tsp
薑 1 片
Ginger 1 sliced
辣椒 1 隻 ( 裝飾 )
Cayenne pepper 1 pcs
 
做法 - Method :
1. 去蠶豆外筴
Peel the Broad Bean covering
 
2. 去掉蠶豆的外層
Peel the Broad Bean skin
 
3. 沸騰水放蠶豆煑2 分鐘
Put Broad bean in boiling water, high heat for 2 min
 
4. 倒去熱水, 放蠶豆在冰凍的水浸至它涼
Pour the hot water , place in iced water until it is cool
 
5. 倒去凍涼的水, 瀝乾備用
Pour the iced water, let it dry
 
6. 粗鹽醃的雪菜莖浸1 小時
Soak the Pickled in the water for an hour
 
7. 用紙吸乾雪菜的水
Dry the Pickled with kitchen towels
 
8. 切粒狀
Cut in dice
 
9. 用少許油,加少許糖炒雪菜,倒起
Add oil to fry the Pickled
 
10. 加少許油輕手炒已焯過的蠶豆
Add a bit of sugar to fry the Broad bean
 
11. 倒回雪菜, 二者炒勻
Put the Pickled, stir with the Broad bean
 
12. 上菜
Serve
