材料 - Ingredients:
炸魚 - Fried Fish:
魚柳(白魚魚柳, 如鱈魚) - 4塊
Fish fillet (white fish fillet, such as Cod) - 4 pcs
麵粉A - 100g
Flour A - 100g
麵粉B - 100g
Flour B - 100g
啤酒(白啤) - 200ml
Beer (Blanc)-200ml
蛋黃(可以不加) - 1個
Egg yolk (optional) - 1pcs
白醋(入噴壺) - 適量
White vinegar (into sprinkling can) - TT
 
薯條 - Potato Chips:
薯仔 - 2-3個
Potatoes – 2-3pcs
 
他他醬 - Tartar Sauce:

蛋黃 - 2隻
Egg yolk - 2 pcs
芥末醬/芥末粉 - 1tsp
Mustard sauce / Mustard Powder - 1tsp
油 - 200g
Oil - 200g
酸黃瓜 - 20g
Gherkins - 20g
酸豆 - 20g
Capers - 20g
白酒醋/白醋/檸檬汁 - 1-2tsp
White Wine Vinegar / White Vinegar / Lemon Juice-1-2tsp
鹽和黑椒 - 適量
Salt and black pepper - TT
 
做法 - Method:
薯條 - Chips:
1. 把 薯仔 清洗去皮, 切成均一的條狀, 浸水(中途換水)直至浸薯仔的水變成清晰為止, 取出薯條, 用毛巾印乾表面的水份, 備用;
   Peel and Batonnet the potatoes, then soak them in water. Change the water time to time, until the water becomes clear, Take out the potato and put on the towel, make it dry and set aside;

2. 準備一鍋油, 燒至130c, 分批加入薯條, 炸至表面形成一層脆殼, 撈起;
   Prepare pot of oil, heat up to 130c, add potato in batches, and deep-fry for 5 minutes or until a crispy shell is formed on the surface.
 
3. 把熱油升溫至180c, 分批加入已炸了一次的薯條, 炸至表面金黃和脆身為止, 撈起;
   Heat up the oil to 180c, add the fried potato chips once again in batches, and fry until the surface is golden and crispy.
 
4. 準備一個大盤, 加入已炸好的薯條, 加入適量的鹽, 拌勻即可。
   Prepare a mixing bowl, add the deep-fried potato chips, add salt, and mix well.
 
炸魚 - Fried Fish:
1. 炸漿: 先混合 麵粉B 和 啤酒, 之後可加入 蛋黃 作調色, 然後放入雪櫃約 30分鐘至1小時, 備用;
   Beer Battered: Mix flour B with beer first, then add egg yolk for color mixing, and then put it in the refrigerator for about 30 minutes to 1 hour, set aside;
 
2. 30分鐘至1小時後, 準備一鍋油, 燒至180c, 先把 魚柳 的2面沾上 麵粉A, 然後放入 炸漿中 均勻地沾上, 放入熱油中;
   After 30 minutes to 1 hour, prepare a pot of oil and heat up to 180c. First, dip the both sides of fish fillet with flour A, and then put it into Beer Battered, after that put into hot oil;
 
3. 當底面的 炸漿 已炸至 硬身後, 反轉另一面, 當2面炸至金黃色時, 取出。 最後可在 炸魚 和 薯條 上, 噴上適量的 白醋 即可。
   When the bottom of fish fillet has been firmed, turn it over to other side. When  both sides are fried to golden brown, take it out. Finally, the fish and chips can be sprayed with white vinegar.
 
他他醬 - Tartar Sauce:
1. 先把 酸黃瓜 和 酸豆 切碎, 備用;
   Chopped the Gherkins and Capers, and set aside;

2. 準備一個盤, 放入 蛋黃 和 芥末醬/芥末粉, 打勻, 之後慢慢地加入 油, 邊加邊打勻;
   Prepare a mixing bowl, add egg yolk and mustard/mustard powder, mix well, slowly add oil and mix well while adding;
 
3. 當 蛋黃 和 油 完全混合後, 加入 酸黃瓜 和 酸豆, 打勻;
   When the egg yolk and oil are completely mixed, add Gherkins and Capers, mix well;
 
4. 最後加入 白酒醋/白醋/檸檬汁, 鹽和黑椒, 打勻;
   Finally add white wine vinegar/white vinegar/lemon juice, salt and black pepper, mix well;
 
5. 完成後先放入雪櫃, 直至食用時才取出。
   Put into refrigerator when finished, and take it out until serve.
