Giant Grouper:

材料 : Ingredients :
清水 (Water) – 2.5L
龍躉骨 (Giant Grouper Bone) - 105g
豬筒骨 (Pork bone) - 2件 (pcs)
河南淮山 (Henan Huaishan) - 30 g
寧夏杞子 (Ningxia Lycium Barbarurm L) - 9g
南杏  (Sweet Apricot Kernel) - 9g
海玉竹 (Dried Yuzhu Head) - 30g
生薑 (Sliced Ginger) - 3 片 (pcs)  
陳皮 (Tangerine Peel) - 一角 (1/3 pc)  
自制魚高湯 (選擇性) (Homemade Fish Stock, optional) - 250ML
(如用龍躉骨, 可不使用)
 
做法 : Method:
1. 洗淨魚骨、豬筒骨備用
Clean the Giant Grouper Bone, Pork bone
 
2. 開火煲滾水, 放豬筒骨汆水
Boil the Pork leg bone to blanch for few minutes, to clear the dirty
 
3. 加小小油, 放薑片, 煎魚骨至金黃色
Add oil on pan , fry the Giant Grouper Bone with sliced ginger until the col of fish meat turned to yellow
 
4. 在2.5公升清水中,放入淮山、杞子、南杏、海玉竹
Put the Huaishan, Lycium Barbarurm L, Sweet Apricot Kernel, Dried Yuzhu Head into 2.5L of water
 
5. 水滾放豬展骨、自制高湯 (選擇性)
Put Pork leg bone and Homemade concentrated soup (optional) into the boiling water

6. 15 分鐘後放魚骨在豬骨湯水中
After boiling the pork bone for 15 min, put in fried fish bone with ginger and tangerine Peel
 
7. 大火煲 1小時後, 關火留20 分鐘, 再開慢火煲熱, 湯己可飲用
High heat for 1 hour. Fire off, and wait for 20 min.
Turn on the heat and heat up the soup, and ready to serve.
