出來的效果是十分軟嫩~~~

材料(2人份) - Ingredients (2 ppl):
鱈魚扒 Cod steak - 2塊 (pcs)
蘆筍 Asparagus - 100g
檸檬皮 Lemon zest - 半個 (half)
檸檬片 Lemon slices - 4片 (slices)
鹽和黑椒 Salt and black pepper - 適量 (QS)
油 Oil - 2 tbsp
意大利黑醋 Balsamic vinegar - 50ml
馬鈴薯泥 - Mashed potatoes:
馬鈴薯/薯仔 (Potato) - 220g
馬鈴薯水 (煮馬鈴薯的水) Potato water (water to boil potatoes) - 25g
室溫鮮奶油 (Room temperature Cream) - 50g
室溫牛油 (Room temperature Butter) - 25g
鹽和黑椒 (Salt and black pepper) - 適量 (TT)
做法 - Methods:
1. 先在 鱈魚扒 的2面均勻地灑上 鹽, 黑椒 和 檸檬皮, 放入真空袋後在 鱈魚扒 的2面加上 檸檬片 和 油, 封袋, 放入50度的水中慢煮 45分鐘;
Sprinkle salt, black pepper and lemon zest evenly on both sides of cod steak, put into vacuum bag and then add lemon slices and oil on both sides of the cod steak, seal the bag, put into 50c water and Sous-vide for 45 minutes;
2. 準備 馬鈴薯泥,

3. 45分鐘後, 取出放在冷水中冷卻;
After 45 minutes, take it out and cool down in cold water;
4. 清洗 蘆筍, 切去部份尾部, 在中間切半, 備用;
Wash and clean the asparagus, trim the root part, cut half at the middle, and set aside;
5. 魚扒 冷卻後, 取出 魚扒 去除 檸檬片 和清除 魚扒 上的白塊, 放在 廚房紙 中吸收表面的水份, 備用;
After the fish steak is cooled down, take out the fish steak to remove the lemon slices and remove the white lumps on the fish steak, cover it with kitchen towel for absorbing the water on the surface, and set aside;
6. 煮一鍋熱水, 加入 鹽, 放入 蘆筍 灼1分鐘, 之後取出, 放在冷水中冷卻, 冷卻後取出, 備用;
Boil a pot of hot water, add salt, add the asparagus and blanch for 1 minute, then take it out and cool down in cold water, take it out after cooling down, and set aside;
7. 濃縮黑醋: 準備一個小鍋, 倒入 意大利黑醋, 先煮滾, 之後轉小火煮至濃稠, 倒出, 備用;
Concentrated balsamic vinegar: prepare a small pot, pour balsamic vinegar, bring to boil, then turn to low heat and simmering until thicken, pour out, and set aside;
8. 準備一個煎鑊, 可放上 焗爐紙, 倒入 油 燒熱, 放入 魚扒 每面煎 1分鐘, 當 2面煎封後取出, 放入 蘆筍, 煎至上色即可取出;
Prepare a fry-pan, can pute baking paper on, pour in oil and heat up, add the fish steak and sealing for 1 minute for each side. When both sides are sealed, take it out, put in the asparagus, and fry until it is coloured and then take it out;
9. 擺盤: 先加上 馬鈴薯泥, 放上 魚扒, 在 魚扒 旁放上 蘆筍, 最後在 蘆筍 上加上 濃縮黑醋, 即可享用。
Plating: Add mashed potatoes, the put fish steak on it, put asparagus next to the fish steak, and finally add concentrated balsamic vinegar on the asparagus, and serve.
