材料 - Ingredients:
自制豬油 - Homemade lard:
豬膏 Pork Fat – 590g
水 Water - 590g(同豬膏一樣 same as Pork Fat)

媽媽的豬油拌飯 - Mom's Lard Rice:
自制豬油 Homemade lard – 1-2tsp
白飯 Rice - 1 碗 bowl
醬油 Soy sauce - 適量 QS

做法 - Methods:
1. 先清洗 豬膏, 之後切成粒狀, 備用;
   Clean the Pork Fat first, then cut into dice and set aside;

2. 準備鍋一個, 加入 豬膏 和 水, 大火煮至水滾, 之後轉中火煮至 水份 剩下小量;
   Prepare a pot, add pork fat and water, boil on high heat until boiling, then turn to medium heat and cook until 1/4 of water remains;

3. 當 水份 剩下小量後, 轉小火慢慢煮至 豬膏 變成淡黃色, 之後隔出第1轉的 豬油;
   When 1/4 of water remains, turn to low heat and slowly cook until the pork fat turns light yellow, then drain out lard;

4. 豬膏 回鍋繼續用小火煮, 煮至 豬膏 變脆身和所有油份都流出後, 再次隔出 豬油;
   Put the pork fat back to the pot and continue to cook with low heat. After the pork fat becomes crispy and all the oil has came out, drain out the lard again;

5. 待 豬油 冷卻後, 倒入容器中儲存(可放室溫儲放)。
   After the lard cool down, pour it into a container for storage(can keep at room temperature).

6. 媽媽的豬油拌飯: 準備 熱飯 一碗, 加入 生蛋, 豬油 和 醬油, 拌勻, 即可。
   Mom's Lard Rice: Prepare a bowl of hot rice, add raw egg, lard and soy sauce, mix well, serve it.
