南瓜湯, 西餐常常都嚐過,
今次就用南瓜湯來煮雞鮑(仿)翅!!!
豪氣一點, 雞鮑(仿)翅伴飯 亦可!!!
Pumpkin soup, will often tasted in restaurant,
This time I use pumpkin soup to make chicken abalone (imitation) shark's fin!!!
Want more proud, also can make chicken and abalone (imitation) shark's fin with rice~~~

成品: 3 - 4人

材料 - Ingredients:
貝貝南瓜 Beibei Pumpkin - 800 g
雞 Chicken - 半隻 half (470 g)
豬骨 Pork bone - 210 g
有殼鮑魚 Shelled Abalone - 8 隻 pcs
虎蝦 Tiger Prawns - 8 隻 pcs
仿魚翅 Imitation Shark Fin – 500 g
薑 Ginger - 12 g
蔥 Spring Onion - 15 g
料理酒 Cooking wine - 15 ml
自制雞高湯 Homemade chicken Stock - 500 ml
水 Water - 1.5 L

做法 - Method:
1. 先把貝貝南瓜切半, 去籽, 連皮蒸至軟身;
   Cut the Beibei Pumpkin in half, remove the seeds, and steam with the skin until soften;

2. 先清洗 雞 和 豬骨, 準備鍋, 放入 薑, 蔥, 雞 和 豬骨, 加水至蓋過, 倒入 料理酒, 之後用大火煮至沸騰, 沸騰後關火, 倒出 雞 和 豬骨, 再次清洗, 備用;
   Clean the chicken and pork bones, prepare the pot, add ginger, spring onion, chicken and pork bones, add water to cover, pour cooking wine, then bring to boiliing with high heat, then turn off the heat, pour out the chicken and pork bones, wash again, set aside;

3. 有殼鮑魚 去殼, 去內臟, 去鮑魚嘴, 之後清洗, 在在表面切花, 備用;
   Shelled abalone, remove the shell, internal organs and the mouth of the abalone, then wash, cut the pattern on surface, and set aside;

4. 貝貝南瓜軟身後, 取出放涼, 之後去皮, 備用;
   After the Beibei pumpkin is soften, take it out and let it cool down, then peel it and set aside;

5. 準備湯鍋, 倒入自制雞高湯 和 水, 大火煮至沸騰, 取出 320ml 和 貝貝南瓜肉混合, 攪拌成蓉, 之後過篩, 然後倒入湯鍋中和雞湯混合;
   Prepare the soup pot, pour homemade chicken stock and water, bring to boiling with high heat, then take out 320ml and mix with Beibei pumpkin flesh, blend into puree, then sieve, then pour into the soup pot and mix with the chicken stock;

6. 放入已川燙的 雞 和 豬骨 在 雞湯中, 大火煮至沸騰, 之後轉小火煮30分鐘;
   Put the blanched chicken and pork bones into chicken stock, bring to boiling with high heat, then turn to low heat and cook for 30 minutes;

7. 30分鐘後, 放入鮑魚 在 雞湯中, 中火煮至沸騰, 之後轉小火煮30分鐘 - 1小時;
   After 30 mins, put the abalone into chicken soup, bring to boiling with medium heat, then turn to low heat and cook for 30 mins - 1 hour;

8. 用剪刀把 虎蝦 的 腳和角 剪去, 挑出蝦腸, 之後清洗, 備用;
   Use scissors to cut off the feet and rostrum of the tiger prawns, pick out the prawns intestines, then wash them and set aside;

9. 1小時後, 再次大火煮至沸騰, 之後轉小火, 放入 已處理的虎蝦, 煮至所有虎蝦熟後馬上關火取出, 蓋上蓋, 備用;
   After 1 hour, bring to boiling with high heat, then turn to low heat, put in the processed tiger prawns until all the tiger prawns are cooked, turn off the heat immediately and take it out, cover the lid, and set aside;

10. 先清洗仿魚翅, 之後準備鍋, 倒入一半湯, 大火煮至沸騰, 加入仿魚翅, 小火煮5 - 10分鐘, 之後關火, 備用;
    First clean the imitation shark fin, then prepare the pot, pour half of the soup, bring to boiling with high heat, add imitation shark fin, cook for 5-10 minutes with low heat, then turn off the heat and set aside;

11. 準備碗, 先倒入 仿魚翅 至 1 半, 之後放上 虎蝦 和 鮑魚, 再倒入湯至 8成, 即可。
    Prepare a bowl, pour the imitation shark fin to half, then add tiger prawns and abalone, and then pour the soup to 80%, serve it.
