今次會用上次煮牛肉高湯剩下的牛肉來做一道傳統農家菜的菜式~~~
This time, I will use the beef left over from the beef broth last time to make a traditional dish~~~

材料 - Ingredients:
薯泥 - Mashed Potatoes:
褐皮馬鈴薯 Russet Potatoes - 950 g
牛奶 Milk - 200 ml
肉豆蔻 Nutmeg - 1/3 pcs
牛油 Butter - 160g
鹽和黑椒粉 Salt and black pepper - 適量 QS

牛肉餡 - Beef filling:
熟牛肉 Cooked Beef - 600 g
洋蔥 Onion - 90 g
巴西里葉 Parsley Leaves - 3 g
牛高湯 A Beef Stock A - 100 ml
鹽和黑椒粉 Salt and black pepper - 適量 QS

牛汁 - Beef Sauce:
牛高湯 B Beef Stock B - 500 ml

其他 - Other:
水牛芝士 Mozzarella Cheese - 適量 QS
巴馬臣芝士 Parmesan cheese - 適量 QS
麵包糠 (可略) Bread crumbs (optional) – 100 g

做法 - Method:
1. 先清洗 褐皮馬鈴薯, 用叉在 表面(連皮) 打孔, 備用;
   Wash and clean the Russet Potatoes first, punch holes on the surface (with the skin) with a fork, and set aside;

2. 預熱烤箱至 230c, 準備烤盤放上錫紙, 再放上 褐皮馬鈴薯, 接著倒油在 褐皮馬鈴薯上, 之後滾動 褐皮馬鈴薯, 讓整個 褐皮馬鈴薯 都能沾上 薄薄的油, 最後蓋上錫紙, 放入烤箱烤 1 - 1.5 小時; 
   Preheat the oven to 230c, prepare a baking tray and put tin foil on it, then put the Russet Potatoes, pour oil on the Russet Potatoes, then roll them so that the whole potatoes can be coated with a thin layer of oil, and finally cover with tin foil and bake in the oven for 1 - 1.5 hours;

3. 準備小鍋, 倒入 牛奶, 刨 肉豆蔻 在奶上, 之後拌勻, 之後煮至沸騰, 關火, 蓋上鍋蓋靜止 15 分鐘;
   Prepare a small pot, pour in milk, graze nutmeg on the milk, mix well, then bring to a boil, turn off the heat, cover the pot and let it stand for 15 minutes;

4. 準備小鍋, 倒入 牛高湯 B, 煮至沸騰後轉小火, 濃縮至剩下 100 ml, 關火, 備用;
   Prepare a small pot, pour in the beef stock B, bring to a boil, then turn to low heat, concentrate to the remaining 100 ml, turn off the heat, and set aside;

5. 把 熟牛肉 拆骨, 手撕成肉碎, 備用;
   Debone the cooked beef, tear it into minced meat, and set aside;

6. 洋蔥 切成細粒, 備用;
   Diced the onion into fine pieces, and set it aside;

7. 巴西里葉 切成幼絲, 備用;
   Julienne the Parsley Leaves, set aside;

8. 1 - 1.5 小時後, 用針剌入 褐皮馬鈴薯, 如能輕易刺入即可取出, 然後先原封靜止 30 分鐘;
   After 1 - 1.5 hours, use a needle to pierce the Russet Potatoes, if it can be easily pierced, you can take it out, and then rest for 30 minutes; 

9. 準備平底鑊, 加入油, 中火燒熱後加入 洋蔥粒, 當 洋蔥粒 炒至軟身和透明(不上色)後加入熟牛肉, 熟牛肉炒熱後加入 牛高湯A, 炒至收汁後關火, 加入 巴西里葉絲, 拌勻, 備用;
   Prepare a flat pan, add oil and heat with medium heat, add onion diced, fry the onion diced until softened and transparent (not coloured), then add the cooked beef, stir-fry it and add the beef stock A, fry until the almost dry then turn off the heat, add Parsley Leaves, mix well, set aside;

10. 先把所有 褐皮馬鈴薯 去皮, 備用;
    Peel all the Russet Potatoes first, and set aside;

11. 準備粉篩, 把 褐皮馬鈴薯 放在粉篩上用力壓成 薯泥, 備用;
    Prepare the flour sieve, put the Russet Potatoes on the flour sieve and press them into mashed potatoes, set aside;

12. 把 牛油 放入 牛奶 中, 加熱至 牛油 完全溶化, 備用;
    Put the butter into the milk, heat until the butter is completely melted, and set aside;

13. 把 牛奶 過篩隔出 肉豆蔻碎, 倒入 薯泥 中, 加入適量的 鹽和黑椒粉, 完全混合, 備用;
    Sieve the milk to separate the nutmeg, then mixed the mashed potato, salt and black pepper powder, set aside;

14. 準備器皿, 先在底部加入 1/3 高度的 薯泥, 抹平, 加入適量的 水牛芝士 和 巴馬臣芝士, 加入 1/3 高度的 牛肉餡, 抹平, 加入適量的 水牛芝士 和 巴馬臣芝士, 加入 1/3 高度的 薯泥, 抹平, 最後 把 麵包糠 平均地灑在 薯泥上;
    To prepare a Casserole Dish, first, add 1/3 height of mashed potato to the bottom, spread it evenly, add some Mozzarella Cheese and Parmesan Cheese, add 1/3 height of beef filling, spread it evenly, add some Mozzarella Cheese and Parmesan Cheese, add 1/3 height of mashed potatoes, spread it evenly, and finally sprinkle the bread crumbs evenly on the mashed potatoes;

15. 預熱烤箱至 180c, 上火模式, 放入 牛肉薯泥派 烤 5 - 10 分鐘 或 至 麵包糠 上色為止;
    Preheat the oven to 180c, upper heat mode, put in the Beef Parmentier and bake for 5-10 minutes or until the bread crumbs are coloured;

16. 5 - 10 分鐘 或 至 麵包糠 上色後, 分成 4 份, 淋上牛汁, 即可。
    After 5 - 10 minutes or until the bread crumbs are coloured, divide into 4 portions, drizzle with beef sauce, and serve it.
