病癒之後, 真要調理一下身體,

所以我來煲一個廣東式版的《鮮人蔘煲雞湯》

做些簡單些, 不太複雜的,

以調理好身子為主要。

份量 Serving: 4 ppl

材料 - Ingredients:

38 g 鮮人蔘 Fresh Ginseng Root

ea (600g) 竹絲雞 Silkie

254 g 𦟌  Pork shank bone

36 g 海玉竹頭 Dried Yuzhu Head

2 pc 紅棗 Red Dates

3000 ml 清水 water

 

做法 - Method:

  1. 沖洗豬𦟌, 竹絲雞, 海玉竹頭 、紅棗, 備用;  

Rinse pork shank bones, Silkie, Dried Yuzhu head and red dates

 

2. 沖洗人蔘, 輕輕洗去外皮的泥, 備用;

   Rinse the ginseng and gently wash away the mud from the outer skin

 

3. 𦟌 竹絲雞 汆水, 備用;

   Blanch the  Pork Shank bone and Silkie

 

4. 切去雞腳, 備用;

   Cut off chicken feet and keep it;

 

5. 海玉竹頭切段, 紅棗去核, 備用;

   Cut the dried yuzhu into section, take the red dates core off;

 

6. 鮮人蔘可切片 原條

   Fresh ginseng can be sliced or not;

 

7. 清水中放入 鮮人蔘、海玉竹、去核紅棗, 大火;

   Add fresh ginseng, dried Yuzhu, pitted red dates into water, high heat

 

8. 準備湯鍋, 加水和沸騰後, 放入豬𦟌骨、竹絲雞;

    Prepare a soup pot, pour in water and bring to boiling, then add Pork shank bone and Silkie;

 

9. 20 分鐘後 轉中火, 60 分鐘後 轉小火, 之後 30 分鐘後 關火, 留煲內一會兒, 即可。

    Turn to medium heat after 20 minutes, then turn to low heat after 60 minutes, turn off the heat after 30 minutes, let it rest in the pot for a while, serve it.
