材料 - Ingredients:
986g 牛𦟌 Beef Shank
1 條(633g ) 白蘿蔔 Radish
4 塊 pc厚切薑片 thick sliced ginger
1/3片 pc陳皮 dried tangerine peel
3000 ml清水 water
做法 - Method
1. 牛𦟌切段, 沖洗;
Beef shank cut into sections, rinse;
2. 放薑片在水, 水沸騰放入牛𦟌, 汆水
Put the ginger slices in the water, Bring the water to boiling then add the beef shank;
3. 準備湯鍋, 倒入清水, 先把水用大火煮至沸騰, 放入汆水後的牛𦟌, 陳皮, 薑 2 片,
Prepare soup pot, pour in water and bring to boiling with heat, put the blanched beef shank, dried tangerine peel, and 2 slices of ginger;
4. 白蘿蔔去皮, 沖洗, 切塊
Peel Daikon, wash, then cut into thick pieces;
5. 準備另一個鍋, 放薑片在水, 水沸騰放入白蘿蔔, 中火
Prepare another pot, put the ginger slices in the water, boil the water and add the Daikon, medium heat;
6. 15分鐘轉半透明, 關火, 備用
After 15 mins will be translucent, then turn off the heat, and set aside;
7. 牛𦟌煲 1 小時後, 放入煮過的白蘿蔔, 倒入煮白蘿蔔的水, 轉中火
After the beef shank has been cooking for 1 hour, add the blanched Daikon and the water of the blanching daikon, and turn to medium heat;
8. 30分鐘後關火, 蓋上鍋蓋焗 10分鐘, 之後小火煲 15分鐘, 即可。
Turn off the heat after 30 minutes, cover the soup pot for 10 minutes, then turn to low heat for 15 minutes, finish and serve it.
