材料 - Ingredients:
鴨皮和鴨脂肪 - 240g
Duck Skin and Duck Fat-240g
 
做法 - Methods:
1. 先檢查 鴨皮 和 鴨脂肪 有沒有肉塊連著, 如有要先去除肉塊, 另外如果比較大塊, 可先切成小塊;
   First check the duck skin and duck fat with meat or not, if with meat, remove it first, and if it is larger, it can be cut into small pieces first;
 
2. 清洗已處理好的 鴨皮 和 鴨脂肪;
   Wash the processed duck skin and duck fat;
 
3. 準備一個小鍋, 放入已處理好的 鴨皮 和 鴨脂肪, 加 水 至蓋過, 先開大火煮至大滾, 轉中火煮至水份減小至一半以下;
   Prepare a small pot, put the processed duck skin and duck fat, add water until covered, bring to a boil with high heat first, then turn to medium heat and reduce the water to half or less
 
4. 當水份減小至一半以下, 轉小火和開始定時刮底部以防黏底;
   When the water is reduced to half or less, turn to low heat and start to scraping the bottom time to time to prevent sticking to the bottom;
 
5. 當開始變成清澈和偏黃時, 檢查 鴨皮 和 鴨脂肪, 如已變成油渣(即已乾身, 像炸過的), 即可關火過篩。
   When it starts to become clear and yellow, check the duck skin and duck fat, if it has turned into oil residue(that is dried, like deep-fried), you can turn off the heat and sieve.
 
6. 隔出 鴨皮 和 鴨脂肪 後, 待涼後就可倒落器皿儲存。
   Sieved out the duck skin and duck fat, can be stored in container after cooling down.
 
P.S. 鴨油可用來煮油封鴨腿。
P.S. Duck Fat can be used to make Confit Duck Leg.
