材料 - Ingredients:
羊架 - 1 排
Lamb Rack - 1 pack
 
做法 - Methods:
1. 先用骨刀把皮去掉;
    First remove the skin with a bone knife;
 
2. 切除骨頭和多餘的部份;
    Removal of bones and excess parts;
 
3. 在約1" - 1.5" 位置刺穿做一個記號;
    Pierce a mark at about 1"-1.5";
 
4. 順著記號割成1條直線;
    Cut a straight line along the mark;
 
5. 在骨上割開骨膜至見骨;
    Cut hardly the membrane on the bone till see the bone;
 
6. 用小刀挖去黏在骨上的骨膜;
    Use a paring knife to scrape out the membrane which is stick on the bone;
 
7. 用小刀挖去黏在骨上的肉至完全乾淨。
    Use a paring knife to remove the meat that sticks on the bone until it is completely clean.
