蠔豉 :
產地有日本、南韓、內地及本港流浮山,有生曬、乾及半乾濕。
外殼稱牡蠣 ( Ostreae Concha), 是中藥材之一。
含蛋白質、脂肪、肝糖Glycogen, 氨基酸及礦物質,可以穩定血糖濃度,提供身體能量來源,亦可降低血膽固醇濃度,補男女氣血,補腎。
提供孕婦妊娠期出現的體虛,貧血,促進胎兒的生長發育
Dried Oyster : The Origin is fm Japan, South Korea, the mainland, and Hong Kong's Lau Fau Shan. There are 3 kinds of them: raw sun, dry and semi-wet.
The shell is called oyster shell and can be used as a Chinese herbal medicine.
Dreid Oyster contains protein, fat, glycogen , amino acids and minerals, it can stabilize blood glucose concentration, provide energy source for the body, can also reduce blood cholesterol concentration, supplement men and women qi and blood.
It also provide pregnant women with physical weakness, anemia, and promote the fetal growth and development.
 
註 : 進食有節制,因蛋白質含量高,需要時間消化,慢性皮膚病,脾胃寒者,不宜多吃。
Remarks  : Eat sparingly, because of the high protein content, it takes time to digest, chronic skin disease, spleen and stomach cold, should not eat more.
 
花生 :
原粒花生的紅衣止血作用比花生高50倍,外皮紅衣有養血補血之用。
花生可以增強記憶力、延緩腦功能衰退、滋潤皮膚、降膽固醇。
Peanuts: The red skin of the original peanuts are 50 times more hemostatic than peanuts.
Peanuts can enhance memory, delay brain function decline, moisturize the skin, and lower cholesterol.

不宜 : 糖尿病、高脂蛋白血症、痛風、胃炎、膽囊切除者
Not suitable: Diabetes, hyperlipoproteinemia, gout, gastritis, cholecystectomy

眉豆 :
含蛋白質、脂肪、礦物質,合腳氣病人士
註: 滯胃、氣滯者少吃;尿酸高及痛風者不宜進食
Black- Eyed-Pea
Contains protein, fat, minerals, good for having the beriberi
Note: Those who have stomach should eat less; those with high uric acid and gout should not eat
 
髮菜 : 陸地生長條狀的藻類,含鐵質、補血烏髮
寧夏出產最多、質量最好、是寧夏傳統「五寶」中最名貴的一種「黑寶」。市面有假髮菜。
Black Moss: Land-grown strips of algae, containing iron , good to nourishing the blood
Ningxia produces the most and has the best quality. It is the most precious "black treasure" among the Ningxia traditional "five treasures". Fake Black Moss are common in the market.
 
節瓜: 又名毛瓜, 小冬瓜, 是冬瓜變種。
利水清熱,屬正氣的食品(身體在任何狀況都可食)
Fuzzy Melon :
Also known as hairy melon, small winter melon, is a variant of winter melon.
Water-saving and heat-reducing food, that is the vegetable that can be eaten in any condition
 
時間 :  1時30分鐘
Time to cook :  1 hr and 30min
 
材料(3人份) – Ingredients (3 Serves) :
4隻 (pcs) 半濕乾蠔豉 semi-wet oyster
9克 (g)髮菜Black Moss
15克 (g) 花生
15克 (g) 眉豆 Black-eye-Pea
2條 (pcs) 節瓜Fuzzy Melon
3 塊 (pcs) 豬展骨 Pork leg bone
3 隻 (pcs) 冬菇 Shiitake mushrooms
3片 (pcs)生薑 Sliced Ginger 
一角 (1/3 pc) 果皮 Tangerine Peel 
2.5 公升 (2.5L)清水 Clear Water
 
做法 - Method:
1. 清水浸軟冬菇, 切去冬菇腳
Soak the Shiitake mushrooms in water until it soft, cut off the feet
 
2. 清水浸蠔豉 5 分鐘
Soak the semi-wet Oyster for 5 min
 
3. 清水浸髮菜
Soak the Black Moss
 
4. 洗淨豬展骨備用
Clean the Pork leg bone
 
5. 刨節瓜皮. 不切, 留原個
Peel the Fuzzy Melon, uncut, keep the whole one
 
6. 開火煲滾水, 放豬展骨汆水
Place the Pork leg bone in boiling water for few minutes, to clear the dirty
 
7. (大火) 放花生、眉豆、冬菇、蠔豉在2.5公升清水中
(High heat) Put the Peanut, Black-Eyed-Pea, Shiitake mushroom , soaked and cleaned semi-wet Oyster into 2.5 L of water
 
8. 水滾放豬展骨
Put Pork leg bone into the boiling 2.5 L water
 
9. 30分鐘後放入2個整個節瓜, 薑片入湯中
After boiling the bone for 30 min, put in the whole Fuzzy Melon and ginger slice
 
10. 1小時15 分鐘後放髮菜在湯水中
After boiling for1 hour and 15 min, put in the Black Moss
 
11. 慢火煲10 分鐘後, 關火留10分鐘, 湯己可飲用
Turn to Low Heat.
After 10min, fire off, and wait for 10 min. Soup is ready
