炸茄子, 
大家都可能會想起天婦羅或街邊小吃,
但今次會用很特別的方法去處理~~~

材料 (3-4人份) - Ingredients (3-4ppl):
茄子 Eggplant - 1條 pcs
面包糠 Breadcrumbs - 130g
蔥 Spring Onion - 10 - 15g
面粉 Flour - 100g
全蛋 Whole Eggs - 2隻

做法 - Methods:
1. 先清洗 茄子, 切去頭尾後, 再把 茄子 去皮後切成均一的條狀, 備用;
   Wash the eggplant first, trimmed the head and end, then peel the eggplant and cut it into strips, set aside;

2. 把 蔥 切粒, 之後和 面包糠 攪勻, 另外把 全蛋 打發, 備用;
   Dice the Spring Onion, then mix it with the breadcrumbs, and beat the whole egg, set aside;

3. 先把 茄條 均勻地沾上 面粉, 之後均勻地沾上 全蛋, 最後均勻地沾上 面包糠, 備用;
   Dip the eggplant chips evenly with flour, then evenly dip the whole egg, and finally dip evenly with breadcrumbs, set aside;

4. 準備一鍋油, 燒熱至 180c, 當油溫熱後, 分批放入 茄條, 把每一面都炸至金黃色即可取出;
   Prepare a pot of oil, heat up to 180c, when the oil is ready, add the eggplant chips by batches, and deep-fried each side until golden brown, then take out;

5. 當所有 茄條 炸至金黃色後, 可配上 他他醬 一起享用。
   When all the eggplant chips are deep-fried until golden brown, then can be served with tartar sauce.
