材料 (2人) – Ingredients (2ppl)
春雞 Spring chicken - 1 隻 Whole
醃料 - Marinade:
香矛 Lemongrass - 35 g
薑 Ginger – 15 g
蒜瓣 Garlic – 10 g
紅蔥頭 Shallots – 30 g
羅勒葉 Basil leaves – 5 g
青檸汁 Lime juice – 15 g
綠辣椒 Green chili – 10 g
黃薑粉 Turmeric powder - 1 tsp
鹽 Salt – 1 tbsp
糖 Sugar – 1tsp
油 Oil – 2 tbsp
點雞汁 - Dipping chicken sauce:
蒜瓣 Garlic cloves – 10 g
紅辣椒 Red chili – 5g
糖 Sugar – 20g
白醋 White vinegar – 15g
水 Water – 15g
檸檬汁 Lemon juice – 20g
魚露 Fish sauce – 1 tbsp
做法 – Methods:
1. 先把薑, 紅蔥頭和蒜瓣切片; 香矛, 綠辣椒切細, 備用;
First slice the ginger, shallots and garlic cloves; chop Lemongrass, Green chili, and set aside;
2. 準備攪拌機, 放入所有醃料的材料(黃薑粉除外), 全部攪碎一起, 之後取出, 加入黃薑粉, 攪拌至完全混和, 備用;
Prepare a blender, add all the marinade ingredients (except turmeric powder), blend all together, then pour out, add turmeric powder, mix well, set aside;
3. 先清春雞, 去除雞毛(如有), 先拆去叉骨, 之後在雞背上垂直切令春雞能攤開, 然後清洗內腔, 之後在春雞的表面和雞腔均勻地塗上醃料, 最後放入雪櫃中風乾一晚;
Clean the spring chicken first, remove the feathers (if any), remove the wishbone first, then butterfly cut the spring chicken, then clean the spring chicken cavity, and then spread the marinade evenly on the skin and the cavity of spring chicken. Put it into refrigerator to air dry overnight;
4. 準備點雞汁, 先把紅辣椒切圈, 蒜瓣切粒, 之後和其他的點雞汁材料混合在一起, 備用;
Prepare Dipping chicken sauce, first slice the red chili, and fine chop the garlic, then mix with other Dipping chicken sauce ingredients and set aside;
5. 之後預熱焗爐至230c, 準備焗盤, 放上烤架, 在烤架上掃上油, 放上春雞(可連醃料一起烤), 之後放入焗爐烤30-45分鐘, 每15分鐘把春雞取出轉方向;
Then preheat the oven to 230c, prepare the baking tray, put the rack on it, brush the oil on the rack, put the spring chicken on rack (can be roasted with the marinade), and then put it into oven for 30-45 minutes. Take out the spring chicken and turn it every 15 minutes;
6. 30-45分鐘之後, 取出春雞, 可切成4份或原隻上碟, 最後配上點雞汁一起享用, 即可。
After 30-45 minutes, take out the spring chicken, which can be cut into 4 pcs or served the whole spring chicken on plate, and finally served with Dipping chicken sauce.
