今次做一款簡單的醬燒豬肋骨~~~
簡單, 易做, 好食~~~

材料 (3-4人) - Ingredients (3-4 people):
豬肋骨 Pork Ribs - 1 排 rack
老抽 Dark Soy Sauce - 3tbsp
玫瑰露酒 Mei Kuei Lu Chiew - 3tbsp

醃料 - Marinade:
海鮮醬 Hoisin sauce - 120g
磨豉醬 Ground bean sauce - 90g
蕃茄醬 Tomato sauce - 180g
蒜頭 Garlic - 30g
薑 Ginger - 45g
白胡椒粉 White pepper powder - 1 tbsp
鹽 Salt - 1 tbsp
蜜糖 Honey - 90g
玫瑰露酒 Mei Kuei Lu Chiew - 60g

做法 - Methods:
1. 先把豬肋骨的骨膜去掉, 之後用 老抽 和 玫瑰露酒 醃約1小時;
   First remove the membrane of the pork ribs, then marinate with Dark soy sauce and rose wine for about 1 hour;

2. 準備醃料, 先把 蒜頭 和 薑 切粒, 之後把 海鮮醬, 磨豉醬, 蕃茄醬, 蒜頭 , 薑, 白胡椒粉 和 蜜糖 倒入煲內, 大火煮至滾後轉小火煮5分鐘(要不時攪拌以防會煮焦), 之後關火隔出 蒜頭 和 薑, 最後加入玫瑰露酒攪勻, 待涼, 備用;
   Prepare the marinade, first chop the garlic and ginger, then add hoisin sauce, ground bean sauce, ketchup, garlic, ginger, white pepper and honey into the pot, boil over high heat until it boils and turn to low heat Cook for 5 minutes (stirring occasionally to prevent it from scorching), then turn off the heat to separate the garlic and ginger, finally add rose wine and stir well, let cool, set aside;

3. 之後另外取出部份醃料稍後使用(約200g), 準備盤一個, 放入 豬肋骨 和把剩下的 醃料 均勻地抹在 豬肋骨 的底和面, 然後放入雪櫃最少8小時或過夜(中途要反轉);
   After that, take out part of the marinade for later use (about 200g), prepare a tray, put pork ribs in and spread the remaining marinade evenly on the pork ribs bothside, then put it in the refrigerator for at least 8 hours or overnight (reverse halfway);

4. 預熱焗爐 150c, 在焗盤中放上錫紙和烤架, 之後放上已醃好的 豬肋骨 和把盤中剩下的醃料 均勻地抹上, 蓋上錫紙, 放入焗爐1.5小時;
   Preheat oven to 150c, cover the baking tray with foil and add a rack in, then put pork ribs on the rack, and spread the remaining marinade evenly from the tray, cover with foil, and put into oven for 1.5 hours, ;

5. 1.5小時後, 取出 豬肋骨, 焗爐升溫至 210c, 除去表面的錫紙, 把之前留起 醃料 均勻地抹在 豬肋骨表面, 入爐30分鐘;
   After 1.5 hours, take out the pork ribs, then rasie to 210c, remove the foil on the surface, and evenly brush the marinade on the pork ribs, and put into oven for 30 minutes;

6. 30分鐘後, 取出 豬肋骨, 再次把之前留起 醃料 均勻地抹在 豬肋骨表面, 入爐15分鐘;
   After 30 minutes, take out the pork ribs, brush the remain marinade on the pork ribs again, and put into oven for 15 minutes;

7. 15分鐘後, 取出 豬肋骨, 先靜止10分鐘, 之後可原排上碟或切條上碟。
   After 15 minutes, take out the pork ribs and let them rest for 10 minutes. Then can be serve with whole pieces or cut into strips.
