西蘭花除左炒來的食,
其實都可以用來打湯~
今次就用西蘭花來做一道簡易濃湯~

材料 - Ingredients:
西蘭花 Broccoli - 700 g
洋蔥 Onion - 200 g
蒜粉 Garlic powder - 1 tbsp
百里香 Thyme - 1 tbsp
巴西利 Parsley- 1 tbsp
月桂葉 Bay leaf - 2 塊 pcs
自制雞湯 Homemade Chicken Stock - 1.5 L
鮮奶油 Cream - 200 g
牛油 Butter - 80 g
脆煙肉 (可略) Crispy bacon (Can Skip) - 適量 QS
脆麵包粒 (可略) Croutons (Can Skip) - 適量 QS
鹽和黑椒粉 Salt and blackpepper powder - 適量 QS
做法 - Method:
1. 先把 西蘭花 的莖取下來, 之後把莖切成片, 然後全部一起清洗, 備用;
First remove the stems of broccoli, then sliced the stems, wash them all together and set aside;
2. 洋蔥 去皮, 切成條狀, 備用;
Peel and slice the onion, and set aside;
3. 準備湯鍋, 先倒入適量的油, 加入牛油, 先小火溶化, 之後轉中火和加入 已切條的洋蔥, 炒至軟身(不可上色), 然後加入 全部西蘭花炒至軟身(不可上色);
Prepare the soup pot, pour in oil, add butter, melt it with low heat, then turn to medium heat and add the sliced onions, and sweat until soften (not colouring), then add all broccoli and fry until soften (not colouring);
4. 西蘭花炒至軟身後, 加入 自制雞湯, 月桂葉, 百里香, 巴西利, 轉大火煮至沸騰, 之後轉小火煮 30 分鐘;
After sweat the broccoli until soften, add homemade chicken stock, bay leaf, thyme, parsley, turn to high heat and bring to boiling, then turn to low heat and simmering for 30 minutes;
5. 30 分鐘之後, 準備攪拌機, 先取走湯鍋內的 月桂葉, 之後把湯鍋內的所有材料用攪拌機攪拌成泥, 然後過篩, 備用;
After 30 minutes, prepare the blender, first remove the bay leaves from the soup pot, and then blend all the ingredients from the soup pot with a blender, and then sieve it;
6. 再次準備湯鍋, 倒入已過篩的西蘭花泥, 加入 鮮奶油, 大火煮至沸騰, 之後轉小火煮 15 分鐘;
Prepare the soup pot again, pour the sieved Broccoli puree, add cream, bring to boiling with high heat, then turn to low heat and reduce for 15 minutes;
7. 15 分鐘後加入 鹽和黑椒粉 調味, 關火;
After 15 minutes, add salt and blackpepper powder to taste, turn off the heat;
8. 準備湯碟, 先加入西蘭花湯, 之後可加入 脆煙肉 和 麵包粒, 最後 可加上小量鮮奶油作裝飾, 即可。
Prepare the soup dish, add Broccoli Soup first, then add the crispy bacon and bread crumbs, and finally add some cream for decoration.
