材料 Ingredients: 
120g 豬油 lard
125g白砂糖 White Sugar
1.5g 鹽 Salt
100-125g 蛋黃Egg yolk
250g 低筋面粉cake flour
1.5g泡打粉Baking powder
2g蘇打粉Baking Soda 
1.5g食用臭粉/銨粉 (選擇性) Ammonium bicarbonate (optional)
50g 腰果Cashew
QS 適量 白芝麻 white sesame
QS 適量 蛋黃Egg yolk (作蛋液使用 For Egg Wash) 
.
做法 – Method:
1.    腰果放入烤箱,160’C烤10-15分鐘,直至有香氣和變微黃色。大部份切碎,備用。(留少部份原粒備用)
Put the Cashew into oven. 160’C for 10-15min. Until good smell and light color. Chop most of them. (keep some for topping)

2.    泡打粉,蘇打粉,臭粉/銨粉 和低筋面粉混合,過篩。
Mix baking powder, Baking Soda, Ammonium bicarbonate and cake flour together. Then sift it. 

3.    豬油,白砂糖混合,打發至出現紋理。加入蛋黃,再打發至完全混合。
Lard and sugar together. Whip until soft and creamy. Put the yolk in. Mix until all together. 

4.    加入 步驟2的粉類和切碎腰果,混合成團。(不要過度混合!)
Place the Step2 flour and chopped Cashew in. Mix to dough (Don’t over mix)
 
5.    分為@25-35g 小團。搽上蛋黃,放上白芝麻 和原粒腰果。
Divide it into 25-35g each. Brush with egg wash, and topping with white sesame and Cashew.

6.    烤箱170’C,烤25-30分鐘。
Bake 170’C for 25-30min.
