材料 Ingredients : 
150g日本北海道小豆 Red bean
63g 日本新鮮百合 Fresh Lily Bulb
1/3 pc 陳皮 Tangerine
1/2 pc片糖 cane sugar   
2000ml 清水 water

方法 - method :
1. 沖洗洗紅豆
   Rinse red beans

2. 百合一片片弄開, 扔去根部
   Breakdown Lily piece by piece, throw away the roots

3. 沖洗百合, 去雜物
   Rinse lilies, remove debris

4. 用清水浸百合一會
   Soak lily in water for a while

5. 先放紅豆、陳皮在清水中, 中火
   First add red beans and dried tangerine peel in water, medium heat

6. 1 小時 5 分鐘 放入新鮮百合
   After 1 hour 5 minutes into the fresh lily

7. 20分鐘後加入半片糖
   After 20 minutes add half a piece of sugar

8. 5 分鐘後關火
   Turn off the heat after 5 minutes

鮮百合,又叫百合根,日文名字叫ゆりね(Yuri-Ne),原產於日本四國島和九州島,大部分出產自北海道,每年產量約有四千噸。

「百合」是由白色或淡黃色的肉質肥厚的鱗片層疊成球形,由 「百」片「合」成。貌似大蒜,狀如白蓮花,所以名為「百合」。

食用百合和觀賞百合是不同的品種,花市出售的百合花的“根”是不能吃的。

最佳生長在深厚土層、肥沃疏鬆的砂質壤土中,鱗莖生長快速、色澤潔白,肉質較厚;不宜栽在黏質土壤,在不良的通氣排水,鱗莖較小,產量低。

百合花凋謝之後,結成果實,果實成熟時,種子隨風飄,落地生根,長出新芽與花苞。

新鮮百合與乾百合營養價值會否有很大差別,基本上是没有的,主要分別在含水量及食法,新鮮百合由於無後期加工,食起來味道淡及帶有少少苦澀味,新鮮百合適宜煲湯、糠水,以上味道可以蓋了它的苦澀味。

一般中藥行多售賣乾百合,鮮百合使用木屑包裹百合,一來防潮、二來避免腐壞;
買回來未食用,要包裹好,可保存二至三星期左右。

乾百合因為曬乾後已抽乾水份,質地當然硬,顏色比較深黃,乾的不會有發霉出現,但亦會有蟲蛀,不要以為可以久存。
