繼上次雪菜鴨絲炆米後,
今次就會用剩餘的鴨骨和鴨架來做另一道~~~
After the Braised Vermicelli with Roasted Duck and Preserved Potherb Mustard from last time, this time I will use the remaining duck bones and duck rack to make another dish~~~

材料 :
全隻 Whole - 燒鴨骨架 Roasted Duck Bone 
2 個 pc - 咸檸檬  Salted lime 
1/3角 pc - 陳皮 Dried Tangerine Peel
2 片 sliced - 薑 Ginger
2 公升 L - 清水 Water 
3 條 stalk - 青蔥 Spring Onion

方法 - Method:
1. 先把鹹檸檬開半, 備用;
   First Cut the salted lime into half, set a side;

2. 先清洗燒鴨骨架, 之後斬成塊, 備用;
   Wash the roasted duck rask first, then chop into pcs, set a sdie;

3. 水滾放鴨骨, 中火
   Put the roasted duck bones into boiling water, turn to medium heat;

4. 30分鐘後加入陳皮, 鹹檸檬;
   After 30 minutes, add dried tangerine peel, salted lime;

5. 20分鐘後熄火, 取起鹹檸檬;
   After 20 minutes, turn off the heat and pick up the salted lime

6. 準備飲時,再放回鹹檸檬, 再煲滾湯水, 放入青蔥, 關火即可。
   Add salty lime when you are ready to drink, then bring the soup to boiling, add the spring onion, turn off the heat, serve it.

“在古書上稱為宜濛子、黎朦子,又因為「孕婦食之能安胎」,故又名益母果、宜母果。鹹檸檬的功效在中醫古籍《本草綱目拾遺》中記載:「宜母子以鹽醃,歲久色黑,可治傷寒痰火」。”
《鹹檸檬鴨湯》是一個傳統的中式湯水,起源在潮州。咸檸檬可以加入熱水飲、凍飲、煲湯、菜式上的配料。

傳說, 中元節也是祭祖節,民間稱此時祭祖的祭品不能用雞,因為雞的爪子往後刨,會把給祖宗送去的錢物都給刨出來,後輩的心意就傳不到祖宗那裏,這樣一來我們後人就沒有保障,所以不能讓雞執行這個任務,那就派鴨子去了。
