60g 雪燕 Gum Tragacanth
4粒 pc 杜拜椰棗 Dubai Date
6 粒 pc鵪鶉蛋 Quail eggs
或 雞蛋 隨意 OR Eggs
120 g 冰糖Cube sugar
2000 ML 清水 Water
方法 - Method:
1. 12小時前浸發雪燕 60g (浸發後, 發大 10倍 = 600g )
Soaking Gum Tragacanth 12 hours ago (10 times larger after soaking, will be 600g)
2. 清洗 3 次 (密篩輔助), 去掉 雜質;
Wash 3 times (with Fine Sieve), Remove impurities;
3. 冷水放入鵪鶉蛋 /雞蛋, 水滾後計 3 分鐘, 之後關火留在熱水中浸 3 分鐘。然後先把 鵪鶉蛋 /雞蛋 用冷水浸涼, 最後去殼;
Put quail eggs / eggs into cold water, then bring to boiling and court for 3 minutes, after that turn off the heat and keep the eggs in hot water for 3 minutes. After 3 mins, put quail eggs / eggs in cold water for cooling down, then remove the shells;
4. 準備湯鍋, 先倒入 2000ML 水, 然後放入杜拜椰棗。先用中火煮 3 分鐘

5. 放入雪燕, 煮40分鐘;

7. 慢火至冰糖溶解, 即可。

PS. 切記不能燉煮超過1小時,雪燕會化成水。

3.印度 : 啫喱雪燕,是梧桐科(Sterculiaceae)蘋婆屬(Sterculia)刺蘋婆樹(Sterculiaurens Roxb)的樹膠,稱為Karaya Gum,國內叫卡拉凍或卡拉膠,泡發後和雪燕類似,所以被稱為印度雪燕,實際與雪燕毫無關係。
4.另外有一種黄蓍膠,Gum Tragacanth,是豆科黄芪属植物黄蓍樹(Astragalus)的分泌物,在食品工業中是多功能添加劑,廣泛地用作乳作劑,穩定劑和增稠劑。
