用牛油果切片來捲蝦,
今次 牛油果蝦卷~~~

材料 - Ingredients:
果凍片 - Jelly Sheet:
西柚汁 Grapefruit juice - 70 g
橙汁 Orange juice - 70 g
橙皮 Orange zest - 少許
橙酒(可略) Orange liquor (Can Skin) - 1 tsp
魚膠片 A Gelatin Sheet A - 2 g
魚膠片 B Gelatin Sheet B - 2 g

牛油果蝦卷 - Avocado Prawn Roll
牛油果 Avocado - 2 個 Whole
檸檬 Lemon - 0.5 個 Whole
蝦 Prawn - 8 隻 pcs
果凍片 Jelly Sheet - 8 小片 small slices
蒔蘿 Dill - 2 條 stalks

辣味蛋黃醬 - Spicy Mayonnaise
蛋黃醬 Mayonnaise - 150 g
辣椒粉 Chili powder - 0.5 - 1 tsp
巴斯科辣椒醬/辣椒仔 Tabasco - 10 滴 drops

裝飾 - Garnish:
西柚柳 Grapefruit segment - 16 片 slices
橙柳 Orange segment - 24片 slices

做法 - Method:
1. 先準備一個平底的盤, 加上小許油抹勻盤底, 貼上一張保鮮膜, 放入雪櫃中冷藏, 備用;
   First prepare a flat tray, add a small amount of oil to spread the bottom of tray, paste a piece of plastic wrap, and put it into refrigerator for chilling and setting aside;

2. 先把 魚膠片 A 浸至軟身, 把 西柚汁 倒入 小鍋中, 把 魚膠片 A 擠出多餘的水份後放入 西柚汁 中, 然後煮至 魚膠片 完全溶化, 過篩和冷卻, 之後倒在已冷藏的盤中, 平均分佈, 再放回雪櫃至完全凝固成果凍;
   Soak the Gelatin Sheet A until soft, pour the Grapefruit juice into a small pot, squeeze the excess water out of Gelatin Sheet A and put into grapefruit juice, then cook until Gelatin Sheet A is completely melted, then sieve it and cool down. After that pour it into a chilled tray, make it evenly, and then put it back into refrigerator until it becomes jelly;

3. 把 魚膠片 B 浸至軟身, 之後把 橙汁 和 橙皮 加入至 小鍋中, 把 魚膠片 B 擠出多餘的水份後放入 橙汁 中, 然後煮至 魚膠片 完全溶化, 最後可加入橙酒, 待至冷卻, 之後倒在西柚果凍層上, 平均分佈, 再放回雪櫃至完全凝固成果凍;
   Soaking the Gelatin Sheet B until soft, then add orange juice and orange zest to a small pot, squeeze the excess water out of Gelatin Sheet B and put it into orange juice, then cook until Gelatin Sheet B is completely melted, and finally add the orange liquor, cool down. After pouring it on the grapefruit jelly layer, make it evenly, and then put it back into refrigerator until it becomes jelly;

4. 準備 8 枝 鋼針/竹籤, 先把蝦腸挑出, 然後用 鋼針/竹籤 由蝦尾刺入至蝦頭(保持直身), 準備一大鍋熱水, 加入適量的粗鹽, 放入所有 蝦 煮至熟透, 之後取出放入凍水中冷卻, 最後去殼(保留最尾一節的殼), 備用;
   Prepare 8 steel needles/bamboo sticks, first pick out the prawn intestines, and then use the steel needles/bamboo stick to pierce the prawn from the tail to head (keep straight), prepare a large pot of boiling water, and add some coarse salt, add all prawns and cook until they are well-cooked, then take them out and cool them in frozen water, and finally remove the shells (keep the tail shell), and set aside;

5. 把 蛋黃醬, 辣椒粉 和 巴斯科辣椒醬/辣椒仔 完全混合, 之後放入雪櫃中, 備用;
   Mix well the mayonnaise, chilli powder and Tabasco, then put it into refrigerator and set aside;

6. 蒔蘿 摘葉, 切碎, 備用;
   Pick the leaves of dill, chop it, and set aside;

7. 用 白鑊 把 西柚柳 和 橙柳 煎至 2 邊, 備用;
   Seal the grapefruit and orange segment of both sides with a pan without oil, set aside;

8.準備一盤水, 把 檸檬 搾汁倒入水中, 亦可把已搾汁的檸檬一起放入水中, 牛油果 去核去皮, 切片, 之後把已切片的 牛油果 放入 檸檬水中, 備用;
  Prepare a bowl of water, pour the squeezed lemon juice into the water, also can put the squeezed lemons into the water together. Then avocado remove the seed and peeled, and then sliced, and then put the sliced avocado into the lemon water and set aside;

9. 取出 果凍片, 用 蝦 作量度, 之後平均切成 8 份, 備用;
   Take out the jelly slices, use prawn as a measurement, then cut into 8 portions on average, and set aside;

10. 在桌上貼上一張保鮮膜, 在 保鮮膜 上掃上少許 檸檬水, 放上 4-5 片 牛油果片, 放上 1 小片 果凍片, 加少許 蒔蘿碎, 放上 已去殼的蝦, 捲起來(收口向下), 備用;
    Put a piece of plastic wrap on the table, brush a little lemon water on plastic wrap, put 4-5 slices of avocado, add 1 small slice of jelly, add a little dill, and put prawn on it, rolled up (closing down), set aside;

11. 準備餐碟, 先放上 牛油果蝦卷, 加上 已煎香的西柚柳 和 橙柳, 擠上 辣味蛋黃醬 在 牛油果蝦卷 上, 最後加上 蒔蘿葉 在 辣味蛋黃醬上, 即可。
    Prepare the dinner plate, put the avocado prawn roll, add the sealed grapefruit and orange segment, pipe the spicy mayonnaise on the avocado prawns rolls, and finally add dill leaves on the spicy mayonnaise, then serve it.
