今天在街市,
看見很多菜店都寫著 水東芥菜,
即時想起家中有一個蕃薯,
於是決定買水東芥菜,
來做一道 水東芥菜蕃薯豬骨湯
I saw a lot of vegetable shops are selling "Shuidong Leaf Mustard" in wet market,
Then I remembered that there was a sweet potato at home,
So I decided to buy Shuidong Leaf Mustard,
To make Leaf Mustard and Sweet Potato with Pork Shank Soup

材料 - Ingredients: 
445g (2 ea) 水東芥菜 Leaf Mustard 
324g (1 ea ) 蕃薯 Sweet potato
335g 豬𦟌骨 Pork Shank pork
1 片 Slice 薑片 Ginger
1750 ml 清水 water

方法 - method: 
1. 沖洗芥菜, 用水浸一會兒;
   Rinse the Leaf Mustard and soak them in water for a while;

2. 沖洗豬𦟌骨, 汆水;
   Rinse the Pork shank bones and blanch it with boiling water;

3. 蕃薯削皮, 浸水備用;
   Peel sweet potatoes, soak in water for later use;

4. 切薑片;
   Slice the ginger;

5. 10分鐘後把已汆水的豬𦟌骨放入沸騰的水中, 轉至中火;
   After 10 minutes, put the boiled pork bones into the boil. Turn to Med heat;

6. 10分鐘後放入蕃薯, 把浸蕃薯的水一起倒入;
   After 10 minutes, add the sweet potatoes and pour in the soaking sweet potatoes water;

7. 準備炒鑊, 先加入油和薑片, 炒芥菜莖至稍為軟身後夾起, 之後炒芥菜葉至轉深綠色後夾起;
Pour in oil and add sliced ginger, and sauté the Leaf Mustard stems until little soften and pick it up, then sauté Leaf Mustard leaves until dark green and pick it up;

8. 15分鐘後加入炒過的芥菜莖至湯中, 轉中小火;
Add the sautéed Leaf Mustard stems after 15 minutes into the soup, then turn to med-low heat;
 
9. 5分鐘後加入炒過的芥菜葉至湯中; 
   5 minutes later add the sautéed Leaf Mustard leaves into the soup;

10. 5分鐘關火, 即可。
    5 minutes to turn off the heat, serve it.
