材料 (4人份)- Ingredients (4 serves):
甘荀 - 1條
Carrot - 1 pcs
西芹 - 1條
Celery - 1 stick
蕃茄 - 5個
Tomatoes - 5 pcs
洋蔥 - 0.5個
Onions - 0.5 pcs
煙肉 - 200g
Bacon - 200g
雞湯 - 1.4L
Chicken Stock - 1.4L
蕃膏 - 170g
Tomato Paste - 170g
忌廉 - 200g
Cream - 200g
蒜頭 - 2瓣
Garlic - 2 cloves
百里香 - 4條
Thyme - 4 stick
月桂葉 - 1片
Bay leaf - 1 pcs
黑胡椒和鹽 - 適量
Black pepper and salt - TT
 
做法 - Methods:
1. 甘荀去皮切粒, 蕃茄去籽切粒, 洋蔥和西芹切粒; 煙肉切成小塊(留起一小部份煙肉小塊做脆煙肉); 蒜頭去皮拍扁備用;
    Carrot peeled and diced, tomato unseeded and diced, onion and celery diced; bacon cut into small pieces (keep a some of bacon for the crispy bacon); garlic peeled and crushed;
2. 先用油大火抄香煙肉, 之後加入洋蔥, 西芹和甘荀中火炒至軟身;
    Sautéing the bacon with high heat, then add the onion, celery and carrot with medium heat until softened;
3. 當洋蔥, 西芹和甘荀炒至軟身加入蕃膏, 炒至有香味和其他材料撈勻後, 加入蕃茄撈勻;
    When the onion, celery and carrot softened, add Tomato Paste and stir-frying til flavor to develop and mix well with other ingredients, then add tomatoes and stir-frying again;
4. 倒入雞湯, 滾起後入拍扁蒜頭, 百里香, 月桂葉, 細火煮20-25分鐘; 同時間可以把之前留起的一小部份煙肉小塊落油大火炒至脆身, 之後隔油備用;
    Pour in chicken Stock, and put the crushed garlic, thyme, bay leaf in, then turn to high heat and bring to boil, after turn to low heat simmering for 20-25 minutes; at the same time, you can sautéing the small portion of bacon (which was keeping for the crispy bacon before), sautéing the bacon until crispy enough, then sieved it.
5. 20-25分鐘後夾出月桂葉棄掉, 把湯連湯料倒入攪拌機攪勻;
    After 20-25 minutes, remove the bay leaf, then pour the soup into the blender and blend til smooth;
6. 倒回湯煲, 加入忌廉,黑胡椒和鹽, 開火, 煲起滾起, 關火;
    Pour back into the pot, add cream, black pepper and salt, turn on the heat to heating up, after that turn it off;
7. 最後加入乾百里香, 脆煙肉, 黑椒碎在面裝飾。
    Finally add dry thyme, crispy bacon, ground black peppercorn on top for the garnish.
P.S. 蕃茄湯可選擇過篩或否, 如想湯順滑, 可以擇過過篩, 如想比較杰身和有野咬, 可以選擇不過篩。
       Tomato soup can be sieved or not. If you want the soup to be smooth, you can choose to sieve. If you want to compare good body and wild bite, you can choose not to sieve.
